DOC: Documentation on using Kepler for highly exploratory analysis

Now that we have Parquet output, its really easy to integrate this into Kepler.gl for exploratory analysis. Its nice to use Matplotlib for visualisations in the notebooks, but I think it would be better to recommend users use Kepler for their EDA as its much more interactive, and scales up nicer.

Note that this is in a similar vein to #1352 (the old notebook did mention Kepler). I think collating how to integrate parcels output into these sorts of visualisation tooling would be beneficial to users.

@erikvansebille , as part of testing - do you have some ~4-10Gb realistic output? I want to stresstest the Kepler tooling

Hmm, I don't have a 4GB parquet file lying around (yet). The largest I have is the one at https://github.com/Parcels-code/parcels-data/raw/refs/heads/main/data-parquet/copernicusmarine_globalsurface.parquet, which is used in https://docs.parcels-code.org/en/main/user_guide/examples/tutorial_homepage_animation.html
