Bump backend to 1.2.0 with release notes for schema-scoped chat policies, admin profile switch, ACME ERP fixture, and fixes since v1.1.0. Add scripts/self-host/e2e-multischema-check.py for policy validation. Co-authored-by: Venkat SF <venkatesh.sakamuri@stayflexi.com>
