The same EC and EC Services docs URLs remain in src/data/projects.rs, so the site will still render broken links in some places despite this update.

This PR updates the “Secure EC” and “EC Services” documentation links shown in the projects UI so they point at the new mdBook-hosted documentation instead of the previously broken URLs.
