Quote the challenge option flags
In shells that reject unmatched globs by default, notably zsh, each unquoted [0] is interpreted as a filename pattern and this copy-paste example exits with no matches found before bitsocial runs. Quote these three flags as in the preceding challenge example and the page-sort example so the documented command works across supported shells.

Fixed in 22d95c4: the three flags are quoted now, matching the other examples. I also added a note about zsh refusing unmatched globs to both challenges.md and page-sorts.md. The same unquoted pattern is in the community edit help example (src/cli/commands/community/edit.ts), which is outside this docs PR, so it will be handled in a follow-up.

Part of #170. This covers the docs index and the two package docs. The daemon, kubo and data-path docs are still open on #170.
