docs(diagrams): recast em dashes and voice in diagram labels - #36

Recast em dashes across all site diagram labels in the paired .svg (embedded on the site) and .excalidraw (editable source), plus the one retained generator spec (specs/56.py) and the diagram catalogue README: apposition -> colon, arrow notation kept as ASCII, leading/trailing continuation dashes dropped. Cleared voice words in labels (deliberately, on-purpose, for-real, plainly) and capstone -> final project. Excalidraw JSON re-validated; residual ban-tier are the Go debugger tool name 'delve' only; Jekyll build clean.
