Replaces the bespoke StoppableThread/AsyncWorker polling for the wired ALERT pin with the canonical gpiodevice.Watch; wait_for_interrupt now uses gpiodevice.wait_for_edge. The no-ALERT-pin path keeps polling the I2C interrupt register. Also updates the stale test conftest (mocked RPi.GPIO) to mock the libgpiod stack the code actually uses.
CHANGELOG topped out at 0.1.4 while v1.0.0 was already tagged on both remotes, so make check refused: it will not accept a top entry that is already tagged. Documents 1.0.0 as tagged (the gpiod/smbus2 port and the repackage went in there, not on this branch, and it never reached PyPI - 0.1.4 is still what's published) and opens 1.0.1 for the work since: the listener polling fix, the gpiodevice.Watch ALERT pin, and the packaging changes.
