Remove specific remittance cost statistics from the escrow chapter and its accompanying diagram, replacing them with more general language about fees.

Changes made:

  • Replaced the detailed statement about traditional finance intermediary fees (citing 6.36% average and 20%+ on worst corridors) with a simpler, more general description that intermediaries "charge a fee for the service"
  • Updated the escrow diagram caption from "keeps 6.36% on average, over 20% on the worst corridors" to the more general "and keeps a fee from each side"
  • Removed the footnote reference to the Introduction's remittance cost source material

Rationale:

This change removes specific statistics that may become outdated or require citation verification, while maintaining the conceptual point that traditional escrow services charge fees. The more general language is sufficient to illustrate the contrast with blockchain-based escrow, which is the chapter's focus.

A bank transfer through an intermediary is not an escrow service, so the
World Bank remittance averages do not describe what an escrow agent
charges. The chapter and its figure now just say the third party takes a
fee.
