Stacked on #39; merge the React 19 migration first. This PR targets
fix/react-19so its diff contains only the Rspress upgrade.Pin the workspace catalog to @rspress/core 2.1.0-beta.1 and update the lockfile, including @rspress/shared. All plugins and the Rstack doc command resolve the beta through the shared catalog.
Validation: frozen install, package build, lint/type-check, docs build, 13 unit tests, and 56 E2E tests passed. The previously failing back-to-top and file-tree docs both generate non-empty HTML, Markdown, llms.txt, and llms-full.txt with the beta's default Markdown rendering enabled.
