Follow-up to #818. Renames the new plugin to match the repo's naming pattern, and moves it from changesets to release-please. It's still 0.0.0 and unreleased, so the rename breaks nothing.

Why

• Naming: plugins are wpgraphql-* when they extend WPGraphQL and hwp-* when they don't (hwp-previews, hwp-cli). This plugin is REST only, so it's hwp-documents. Renaming after the first release would break installs, since the folder name is the install path.
• Release tooling: feat(headless-documents): add a versioned document store plugin #818 merged just after ci: switch plugin releases from changesets to release-please #820 moved releases to release-please. Its .changeset/ file wasn't read by anything, and the plugin wasn't registered as a release-please component.

What changes

• plugins/headless-documents → plugins/hwp-documents, and the main file → hwp-documents.php. Identifiers are renamed case by case to match hwp-previews:
  • namespace Headless\Documents → HWP\Documents
  • constants HEADLESS_DOCUMENTS_* → HWP_DOCUMENTS_*
  • hooks, options, capabilities, and the table headless_document(s)_* → hwp_document(s)_*
  • text domain and REST namespace headless-documents → hwp-documents
  • display name → "HWP Documents"
  • package names → @wpengine/hwp-documents-wordpress-plugin and wpengine/hwp-documents
• The custom phpcs standard HeadlessStandard → HWPStandard, the same name hwp-previews uses. In the PrefixAllGlobals list, the bare headless prefix becomes hwp_document, so the singular hook names still pass.
• Adds the plugin to release-please-config.json and the manifest at 0.0.0. The first feat: merge will propose 0.1.0, which matches the minor bump the deleted changeset asked for.
• Deletes .changeset/headless-documents-initial.md, which also removes the .changeset/ folder.
• Updates references in .github/dependabot.yaml, docs/index.md, llms.txt, and plugins/README.md.
• Lockfiles: refreshed the composer.lock content-hash and the pnpm-lock.yaml path. No dependency versions changed.

Testing

• composer validate, php -l on every file, phpcs, and phpstan pass. psalm ran without errors.
• wpunit and e2e need the Docker environment and haven't run locally; CI covers them.
• git grep finds no remaining headless-documents, headless_document, Headless\, or HeadlessStandard outside lockfiles.
